  • 1/2 cup frozen mango chunks

  • Mango salsa:
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped

Instructions

  1. Cook the quinoa according to package instructions and set aside.

  3. Pour the blended mixture into a bowl and top with the cooked quinoa.
  4. To prepare the mango salsa, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a small bowl.
  5. Spoon the mango salsa over the top of the quinoa and smoothie mixture.
  6. Serve immediately, with a side of fresh seasonal fruit if desired.
