  • 1 cup cooked brown rice 1/2 cup marinated and sautéed tofu 1/2 cup cucumber, thinly sliced 1/2 cup carrots, julienned 1/4 cup red cabbage, shredded 1/4 cup edamame, shelled and cooked 1/4 cup radish sprouts 1/4 cup mixed berries (blueberries, raspberries, and blackberries) 1 tbsp. gochujang paste 2 tbsp. soy sauce 1 tbsp. rice vinegar 1 tsp. honey 1 tbsp. sesame seeds

Instructions

  1. Begin by cooking the brown rice according to package instructions. Allow it to cool while you prepare the other ingredients. In a small bowl, whisk together gochujang paste, soy sauce, rice vinegar, and honey. Set aside. Heat a non stick pan over medium heat. Add marinated tofu and cook until golden brown. Remove from pan and slice into bite sized pieces. Assemble the Energy Bowl by placing cooked rice at the bottom of each bowl. Top with sautéed tofu, cucumber, carrots, red cabbage, edamame, radish sprouts, and mixed berries. Drizzle with gochujang sauce and garnish with sesame seeds.
