Ingredients
- 1 cup fresh pineapple, chopped
- 1 cup fresh papaya, chopped
- 1 banana, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/4 cup chopped cashews
- 1 tbsp chia seeds
- 2 cups coconut milk
- 1 tsp grated ginger
- 1 tbsp honey
- 1/2 lime, juiced
- Fresh mint leaves, for garnish
Instructions
- In a large bowl, combine pineapple, papaya, banana, blueberries, and raspberries.
- In a separate bowl, mix coconut milk, grated ginger, honey, and lime juice.
- Pour the coconut mixture over the fruit and gently toss to coat.
- Sprinkle chia seeds on top and garnish with mint leaves.
- Refrigerate for 20 minutes to allow chia seeds to expand and flavors to meld.
- Serve chilled, and enjoy a day filled with energy!
