Ingredients
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/2 cup coconut milk
- 1 ripe avocado, sliced
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 1 small kiwi, peeled and sliced
- 1/4 cup toasted almonds, roughly chopped
- 1 tablespoon honey or maple syrup
- Fresh mint leaves for garnish
Instructions
- In a medium bowl, mix the almond flour and chia seeds together until well combined.
- Gradually add in the coconut milk while stirring to create a thick paste. Cover and refrigerate for 10 15 minutes, or until it reaches a pudding like consistency.
- Remove the chia mixture from the fridge and divide between two serving bowls.
- Arrange avocado slices on top of the chia mixture.
- Sprinkle mixed berries evenly over the avocado.
- Add kiwi slices to the side of the bowl.
- Drizzle honey or maple syrup over the fruit.
- Garnish with toasted almonds and fresh mint leaves.
