1/2 cup mixed berries (strawberries, blueberries, raspberries)
1 small kiwi, peeled and sliced
1/4 cup toasted almonds, roughly chopped
1 tablespoon honey or maple syrup
Fresh mint leaves for garnish
Instructions
In a medium bowl, mix the almond flour and chia seeds together until well combined.
Gradually add in the coconut milk while stirring to create a thick paste. Cover and refrigerate for 10 15 minutes, or until it reaches a pudding like consistency.
Remove the chia mixture from the fridge and divide between two serving bowls.
Arrange avocado slices on top of the chia mixture.
Sprinkle mixed berries evenly over the avocado.
Add kiwi slices to the side of the bowl.
Drizzle honey or maple syrup over the fruit.
Garnish with toasted almonds and fresh mint leaves.
