Ingredients
- 1/2 cup cooked quinoa 1/4 cup crumbled feta cheese 1/2 cup cherry tomatoes, halved 1/2 cucumber, sliced 1/2 cup chopped kale 1/4 cup pitted Kalamata olives 1/4 cup crumbled walnuts Fresh parsley, chopped Lemon
- herb dressing: 3 tbsp lemon juice 1/2 cup olive oil 1 clove garlic, minced 1/2 tsp dried oregano 1/2 tsp dried basil Salt and pepper, to taste
Instructions
- Cook quinoa according to package instructions, then set aside to cool.
- In a large bowl, combine cooked quinoa, feta cheese, cherry tomatoes, cucumber, kale, olives, and walnuts.
- In a separate small bowl, whisk together lemon juice, olive oil, garlic, oregano, basil, salt, and pepper to create the lemon herb dressing.
- Pour the dressing over the quinoa mixture and toss well. Garnish with fresh parsley before serving.
