  • caught salmon fillet
  • 2 cups mixed baby greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, sliced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped Lemon Dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey or agave syrup (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan to medium high heat. Season the salmon fillet with salt and pepper, and place it on the preheated grill or grill pan. Grill for 4 5 minutes per side, or until cooked through and flaky. Remove from heat and let it rest for a few minutes before cutting into chunks.
  2. In a large bowl, whisk together the olive oil, lemon juice, honey (if using), salt, and pepper to create the lemon dressing.
  3. In two bowls or on two plates, layer the mixed baby greens, cherry tomatoes, cucumber, Kalamata olives, feta cheese, red onion, parsley, and dill. Top with grilled salmon chunks and drizzle the lemon dressing over each bowl.
