- 1 cup coconut milk 1/2 cup cubed watermelon 1/2 cup chopped cucumber 1/2 lime, juiced 1 stalk lemongrass, trimmed and finely chopped 2 tbsp almond butter 1/4 tsp stevia or other sweetener (optional)
Instructions
- In a blender, combine coconut milk, watermelon, cucumber, lime juice, lemongrass, and almond butter.
- Blend until smooth and creamy.
- Taste and adjust sweetness if needed with stevia or another low carb sweetener.
