  • 1 ripe avocado
  • 2 cups mixed berries (fresh or frozen)

  • 1/4 cup dried cranberries
  • 1 tablespoon chia seeds

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and cook for 15 minutes or until the quinoa is tender and the water has been absorbed. Remove from heat and set aside to cool slightly.
  2. While the quinoa is cooking, wash and dry your mixed berries. In a blender, combine half of the berries, orange zest, and orange juice. Blend until smooth to create a vibrant citrus berry sauce.
  3. Slice your avocado in half and remove the pit. Dice the avocado into small cubes and set aside.
  4. In a large mixing bowl, combine cooled quinoa, diced avocado, remaining mixed berries, almonds, pumpkin seeds, dried cranberries, chia seeds, mint leaves, salt, and pepper. Toss gently to combine.
  5. Divide the mixture among 4 serving bowls and drizzle the citrus berry sauce over each bowl. Serve immediately.
