  • 1 cup cooked quinoa
  • 1 ripe avocado

  2. Mash the avocado in a separate bowl with lime zest, salt, and pepper until smooth and creamy. Set aside.
  3. In each of two serving bowls, place a generous scoop of the citrus quinoa mixture, followed by a layer of mashed avocado.
