  • 1 cup Egyptian basmati rice
  • 3 cups almond milk
  • 2 tbsp rosewater
  • 4 tbsp honey
  • 4 oz dark chocolate, finely chopped
  • 1/2 cup dried apricots, finely chopped
  • 1/2 cup pistachios, coarsely ground
  • 1/2 tsp cardamom powder
  • 1/4 tsp salt

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine rice, almond milk, rosewater, and a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for 18 minutes or until the rice is tender. Remove from heat and let it sit covered for another 5 minutes.
  2. In a double boiler, gently melt the dark chocolate and honey together, stirring occasionally until smooth.
  3. Fold in the chopped apricots and ground pistachios into the melted chocolate mixture. Add cardamom powder and mix well.
  4. Gently fold the rice into the chocolate mixture until well combined. Transfer to a serving dish and let it cool completely before refrigerating for at least 4 hours or overnight.
  5. To serve, bring out of the fridge and garnish with a sprinkle of ground pistachios and chopped apricots.
