Instructions

  1. Season the Mahi Mahi fillets with salt and pepper on both sides.
  2. Heat a non stick pan over medium heat and add olive oil. Once hot, cook the fish for 4 5 minutes per side or until cooked through. Set aside.
  3. In a large bowl, mix together the pineapple, mango, red onion, cucumber, and avocado.
  4. Drizzle with lime juice and toss to combine.
  5. To serve, place mixed greens on two plates and top with the fruit salad.
  6. Add a cooked Mahi Mahi fillet to each plate.
  7. Serve immediately and enjoy this tropical island feast!
