Instructions

  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds or until softened. Remove and place on a clean damp cloth. Repeat with remaining wrappers.
  2. Place a softened wrapper on a cutting board. Layer lettuce, carrots, cucumber, avocado, shrimp, mushrooms, mint, cilantro, and basil leaves in the center of the wrapper.
  3. Fold the bottom edge of the wrapper over the filling, then fold in both sides, and roll tightly into a cylinder. Repeat with remaining wrappers and ingredients.
  4. In a small bowl, whisk together lemon juice, lime juice, rice vinegar, honey, sesame oil, garlic, salt, and pepper. Serve rolls alongside citrus dressing for dipping.
  5. Garnish plates with mixed berries and serve immediately.
