1/2 cup mixed berries (strawberries, blueberries, and raspberries)
1/4 cup chopped macadamia nuts
1/4 cup shredded coconut, toasted
1/4 cup chia seeds
2 tbsp lime juice
1 tbsp honey (or agave syrup for vegan option)
1 tsp coconut oil
Instructions
In a medium bowl, combine cooked quinoa with lime juice and honey or agave syrup. Mix well to ensure the grains are coated evenly.
Assemble the Hawaiian Bowl by layering quinoa, pineapple, avocado, mixed berries, macadamia nuts, shredded coconut, and chia seeds in a serving bowl or glass.
In a small pan over medium heat, melt coconut oil. Add the remaining chia seeds and toast for 2 3 minutes until fragrant and slightly browned. Sprinkle atop the bowl.
