Ingredients
- 2 ripe avocados
- 1/4 cup roasted almonds, coarsely chopped
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup cherry tomatoes, halved
- 1 lemon, juiced
- 2 tbsp fresh basil, finely chopped
- 2 tbsp fresh parsley, finely chopped
- Salt and pepper to taste
Instructions
- Halve the avocados and remove the pits. Scoop out the flesh into a large mixing bowl.
- Mash the avocado until slightly chunky with a fork or potato masher.
- Add lemon juice, chopped basil, and parsley to the bowl, stirring well to combine.
- Season with salt and pepper to taste.
- Gently fold in the roasted almonds, sunflower seeds, pumpkin seeds, and cherry tomatoes until evenly distributed.
