Ingredients
- 1 cup cooked quinoa, cooled 1/2 cup grilled chicken breast, sliced 1/2 cup mixed berries (blueberries, raspberries, blackberries) 1/4 cup almonds, roughly chopped 1/4 cup feta cheese, crumbled 1 avocado, halved and sliced 1 cup arugula 1 tablespoon lemon juice 1 tablespoon olive oil
Instructions
- In a large bowl, combine the cooked quinoa and grilled chicken breast.
- Top with mixed berries, almonds, feta cheese, avocado, and arugula.
- Drizzle lemon juice and olive oil over the top.
- Toss gently to combine, and serve immediately.
