12 large rice paper wrappers 1 cup julienned carrots 1 cup shredded red cabbage 2 cups chopped spinach 1 cup fresh basil leaves 1 cucumber, sliced into thin strips 1/4 cup fresh mint leaves 1/4 cup roasted peanuts, crushed Citrus Bliss Dipping Sauce (see recipe below)
Instructions
Fill a large bowl with warm water. Soak each rice paper wrapper in the water for a few seconds until softened. Place on a clean surface.
Arrange carrots, cabbage, spinach, basil leaves, cucumber, and mint leaves on the softened rice paper.
Fold in the sides of the wrapper and roll up tightly into a cylinder shape. Repeat for all wrappers.
Serve with Citrus Bliss Dipping Sauce and sprinkle crushed peanuts on top.
