Ingredients

  • 12 large rice paper wrappers 1 cup julienned carrots 1 cup shredded red cabbage 2 cups chopped spinach 1 cup fresh basil leaves 1 cucumber, sliced into thin strips 1/4 cup fresh mint leaves 1/4 cup roasted peanuts, crushed Citrus Bliss Dipping Sauce (see recipe below)

Instructions

  1. Fill a large bowl with warm water. Soak each rice paper wrapper in the water for a few seconds until softened. Place on a clean surface.
  2. Arrange carrots, cabbage, spinach, basil leaves, cucumber, and mint leaves on the softened rice paper.
  3. Fold in the sides of the wrapper and roll up tightly into a cylinder shape. Repeat for all wrappers.
  4. Serve with Citrus Bliss Dipping Sauce and sprinkle crushed peanuts on top.
