1 cup cooked brown rice 2 eggs 1/4 cup chopped cucumber 1/4 cup shredded carrots 1/4 cup sliced green onions 1/4 cup cooked kimchi 1 tsp sesame oil 1 tbsp gochujang (Korean red chili paste) Salt and pepper, to taste
Instructions
Cook brown rice according to package instructions and set aside.
In a small bowl, whisk together the eggs. Heat a non stick skillet over medium heat and pour in the eggs. Scramble until just cooked, then set aside.
In a large bowl, combine the cucumber, carrots, green onions, and kimchi. Add sesame oil and gochujang toss to coat. Season with salt and pepper as desired.
