  • 4 slices of whole grain bread, toasted
  • 2 ripe avocados, halved, pitted, and sliced
  • 1 naval orange, zested and segmented
  • 1 grapefruit, zested and segmented
  • 8 large eggs
  • 1 tablespoon white vinegar
  • 4 cups baby spinach leaves
  • Salt and pepper to taste

Instructions

  1. Prepare an ice bath in a large bowl for the eggs.
  2. In a shallow saucepan, bring water and white vinegar to a simmer over medium heat.
