- 1 large head butter lettuce 6 oz cooked and shredded chicken breast 1 cup chopped cucumber 1 cup shredded carrots 1/2 cup fresh cilantro leaves 1/2 cup fresh mint leaves 1/4 cup chopped scallions 1/4 cup peanuts, roughly chopped 1/4 cup Thai basil leaves 2 tbsp rice vinegar 1 tbsp fish sauce 1 tbsp lime juice 1 tsp honey 1 tsp minced garlic 1 tsp grated ginger
Instructions
- a. In a large mixing bowl, combine the chicken, cucumber, carrots, scallions, cilantro, mint, and Thai basil leaves. b. In a separate small bowl, whisk together the rice vinegar, fish sauce, lime juice, honey, garlic, and ginger to create the dressing. c. Pour the dressing over the chicken mixture and toss until well combined. d. Rinse lettuce leaves and place them on a serving plate. e. Spoon the chicken mixture onto each lettuce leaf and sprinkle with chopped peanuts.
