Ingredients

  • 2 salmon fillets (6 oz each) 1 cup cooked quinoa 1 orange, zested and juiced 1 lemon, zested and juiced 1 lime, zested and juiced 1/4 cup chopped fresh cilantro 1/2 cup cherry tomatoes, halved 1 avocado, sliced Salt and pepper, to taste

Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat a non stick skillet over medium heat. Add the salmon fillets and cook for 4 minutes on each side or until cooked through. Set aside.
  3. In a large bowl, combine cooked quinoa, orange, lemon, and lime zests and juices, chopped cilantro, cherry tomatoes, and avocado slices. Toss gently to mix.
  4. To serve, divide the citrus quinoa salad among two plates and place a salmon fillet on top of each.
