Korean Morning Rejuvenation Bowl: A Vegetarian Energy Boost

1 cup mixed vegetables (bell peppers, zucchini, carrots, and mushrooms), julienned
2 cups baby spinach
1 avocado, sliced
4 large eggs, fried or poached
1 tbsp sesame seeds, toasted
1 tbsp black sesame seeds
1 tbsp gochujang (Korean chili paste)
2 tbsp soy sauce
1 tbsp honey
1 lime, juiced
Salt and pepper, to taste
Instructions
Cook the brown rice according to package instructions. Set aside.
In a large skillet or wok, heat a tablespoon of oil over medium high heat. Add the mixed vegetables and cook for 3 4 minutes or until tender but still crisp. Season with salt and pepper to taste.
Add the cooked vegetables to the rice along with baby spinach, tossing gently to combine.
Arrange the vegetable rice mixture in bowls, top with avocado slices and fried or poached eggs.
In a small bowl, mix together gochujang, soy sauce, honey, and lime juice. Drizzle over the bowls and sprinkle with sesame seeds.
