  • 4 oz smoked salmon 1/2 cup blackberries 1/2 cup raspberries 1 avocado, diced 1/4 cup macadamia nuts, roughly chopped 1 cup baby spinach, washed and dried 1/2 cup cherry tomatoes, halved 1 tbsp capers 1/2 lime, juiced Salt and pepper to taste

  1. Step 1: Slice the smoked salmon into bite sized pieces. Set aside. Step 2: In a large bowl, mix together blackberries, raspberries, and lime juice. Lightly toss to coat the berries with the citrus zing. Step 3: Cut the avocado in half, remove the pit, and carefully scoop out the flesh. Dice into small cubes and set aside. Step 4: Roughly chop the macadamia nuts and set them aside. Step 5: Arrange a generous bed of baby spinach in each serving bowl. Layer the salmon, avocado, berries, cherry tomatoes, capers, and macadamia nuts on top. Step 6: Season with salt and pepper to taste. Serve immediately.
