  • 2 salmon fillets (6 oz each)
  • 1 cup quinoa, uncooked
  • 2 cups water or vegetable broth
  • 1 avocado
  • 1 lime, zested and juiced

Instructions

  2. Preheat a grill or grill pan to medium high heat. Season salmon fillets with salt and pepper. Grill salmon for 4 6 minutes per side, or until desired doneness is reached. Remove from heat and let rest for a few minutes.
  3. In a blender or food processor, combine avocado, lime zest and juice, cilantro, olive oil, salt, and pepper. Blend until smooth.
