Ingredients
- 2 slices whole grain bread, sourdough preferred
- 1/4 cup vegan butter, softened
- 2 tbsp strawberry jam without added sugar (e.g., seedless)
- 1 ripe avocado, mashed
- 1/4 tsp lemon juice
- Salt and pepper, to taste
- 2 slices of smoked vegan ham
- Handful of fresh arugula
- 3 oz. package of vegan cheese, grated or thinly sliced
- 1 tbsp chives, finely chopped
Instructions
- Toast the whole grain bread slices to your desired level of doneness.
- In a small bowl, combine mashed avocado with lemon juice, salt, and pepper to taste. Set aside.
- Spread softened vegan butter on one side of each toast slice. Flip one slice of the bread over so that the buttered side is facing down.
- Evenly spread strawberry jam on the unbuttered side of both slices of bread.
- Top one slice with avocado mixture, then layer smoked vegan ham, a handful of fresh arugula, and finally, grated or thinly sliced vegan cheese. Sprinkle with finely chopped chives for an extra touch of flavor.
- Place the other buttered toast slice on top of the layered ingredients, buttered side down. Press gently to slightly compress the sandwich.
- Use a serrated knife to cut the sandwich in half diagonally and serve immediately.
