- 1 avocado, sliced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 cup baby spinach
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh basil
- 1/4 cup toasted almonds
- 1 lemon, zested and juiced
- 1 tablespoon honey
- Salt and pepper, to taste
Instructions
- In a large bowl, combine cooked quinoa, spinach, mixed berries, cucumber, and basil. Toss gently to mix.
- Drizzle with lemon juice, honey, salt, and pepper, and toss again to evenly coat.
- Top the brunch bowl with sliced avocado and toasted almonds.
