Ingredients

  • 8 oz. raw shrimp, peeled and deveined
  • 1 lb. fresh spinach, washed and trimmed
  • 2 cups cooked jasmine rice (for non
  • keto) or cauliflower rice for keto
  • 1 cup diced mango
  • 1 avocado, sliced
  • 1/4 cup chopped macadamia nuts
  • 2 tbsp. coconut oil
  • 2 tbsp. fresh lime juice
  • Salt and pepper, to taste

Instructions

  1. In a large pan over medium heat, melt the coconut oil. Add the shrimp and cook until pink and opaque, about 3 4 minutes per side. Season with salt and pepper and set aside.
  2. In another pan, wilt the spinach in a small amount of water for about 2 minutes. Drain and season with salt and pepper.
  3. Assemble the bowl by placing cooked rice or cauliflower rice at the bottom, followed by wilted spinach, shrimp, mango, avocado, and macadamia nuts. Drizzle with lime juice and enjoy!
