  • 2 tbsp paprika
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander

  • Salt and pepper, to taste
  • 6 sweet potatoes, peeled and diced
  • 4 large garlic cloves, minced
  • 2 lbs fresh green beans, trimmed

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a small bowl, mix together the paprika, cumin, coriander, ginger, salt, and pepper. Rub the spice mixture over the chicken, ensuring it is evenly coated.
  3. Place the chicken in a roasting pan and drizzle with 2 tbsp of melted coconut oil. Roast for 1 hour and 30 minutes or until fully cooked.
  4. Meanwhile, steam or boil the sweet potatoes until tender. In a large bowl, mash them with 2 tbsp of melted coconut oil, salt, and pepper to taste. Set aside.
  5. Heat 2 tbsp of coconut oil in a pan over medium heat. Add the minced garlic and cook for 1 minute. Add the green beans, season with salt and pepper, and cook for 6 8 minutes or until tender.
  6. Slice the roasted chicken and serve alongside the sweet potato mash and garlic green beans.
