Instructions
In a medium saucepan, melt the butter or coconut oil over medium heat. Add the semolina flour and stir continuously for about 5 minutes until the color changes to golden brown.
Gradually pour in the milk while continuing to whisk. Add salt and cook until the mixture thickens and forms soft peaks, around 10 12 minutes.
In a separate saucepan, combine sugar, water, and cardamom. Bring to a boil, then reduce heat and let simmer for 5 minutes. Strain syrup through a fine mesh sieve into a bowl.
Transfer the semolina pudding into serving dishes, drizzle with warm cardamom syrup, and garnish with toasted almond flakes and fresh mint leaves.
