Ingredients

  • 2 (6 oz) Salmon Fillets
  • 1 cup Quinoa, uncooked
  • 1 Lemon, zested and juiced
  • 1/4 cup Fresh Parsley, finely chopped
  • 1/4 cup Fresh Dill, finely chopped
  • 1/2 cup Mayonnaise
  • 1 Garlic Clove, minced
  • Salt & Pepper to taste
  • Olive Oil

Instructions

  1. Rinse and cook quinoa according to package instructions set aside.
  2. In a small bowl, combine parsley, dill, mayonnaise, garlic, lemon zest, 1 tablespoon lemon juice, salt & pepper mix well set aside.
  3. Season salmon fillets with salt & pepper heat olive oil in a non stick skillet over medium high heat.
  4. Sear salmon for 4 minutes on each side, until golden brown and cooked through remove from heat.
  5. To plate, spoon quinoa onto serving dishes, top with seared salmon, drizzle herb aioli, and garnish with lemon zest & fresh herbs.
