  2. Add the remaining coconut milk, vegetable broth, eggplant, and tofu to the pot. Bring to a boil, then lower the heat and simmer for 10 minutes, or until the eggplant is tender.
  3. Stir in the bamboo shoots, lime leaves, soy sauce, palm sugar, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld together.
  4. Remove from heat and serve over rice or noodles. Garnish with bean sprouts, basil leaves, and green onions.
