  • 1 cup gluten
  • free phyllo dough sheets 1/2 cup finely chopped walnuts 1/4 cup granulated sugar 1 tbsp cinnamon 1/2 tsp ground cloves 1/2 cup unsalted butter, melted For the syrup: 1/2 cup water 3/4 cup granulated sugar 1 tbsp lemon juice 1 cinnamon stick 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the walnuts, sugar, cinnamon, and cloves until well combined. Set aside.
  3. Unroll the gluten free phyllo dough sheets and cut them into four equal squares. Keep the remaining dough covered with plastic wrap to prevent drying out.
  4. Lay one phyllo square on a clean surface and brush lightly with melted butter. Repeat for the next three layers.
  5. Place approximately 1 tablespoon of the walnut mixture onto the center of the top layer of phyllo dough.
  6. Fold the edges of the phyllo squares towards the center, enclosing the walnut mixture and creating a triangle shape.
  7. Repeat steps 4 6 with the remaining phyllo squares and walnut mixture.
  8. Place the baklava triangles on a parchment lined baking sheet. Bake for 20 25 minutes or until golden brown.
  9. While the baklava bites are baking, prepare the honey syrup by combining water, sugar, lemon juice, cinnamon stick, and vanilla extract in a saucepan over medium heat. Bring to a boil and simmer for 5 minutes, then remove from heat and let cool.
  10. Remove the baklava bites from the oven and allow them to cool slightly. Drizzle the honey syrup generously over the baklava bites and sprinkle with toasted pistachios.
