Instructions
Preheat your oven to 350°F (175°C). Grease and line 6 individual silicone muffin molds or use paper liners. In a large bowl, whisk together almond flour, cocoa powder, salt, and baking soda until well combined. Set aside. In another bowl, beat egg yolks with granulated erythritol and vanilla extract until smooth. Stir in the hazelnut meal. Gradually add the dry ingredients into the wet ingredients, mixing until fully incorporated. Fold in the sugar free chocolate chips. In a separate bowl, beat egg whites using an electric mixer until they form stiff peaks. Gently fold the beaten egg whites into the batter, taking care not to deflate them. Divide the batter evenly among the prepared muffin molds, filling each one almost to the top. Bake for 20 25 minutes or until a toothpick inserted in the center comes out clean. Allow the torte towers to cool completely before removing from the molds.
