Ingredients
1 lb large shrimp, peeled and deveined
2 cups chicken broth
2 cups water
1 cup stone
ground grits
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup unsalted butter
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
2 teaspoons Cajun seasoning
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
In a large pot, combine the chicken broth, water, and bring to a boil. Gradually whisk in the grits, reduce heat to low, and simmer until cooked through, about 20 minutes. Stir frequently to prevent sticking.
Season shrimp with Cajun seasoning, salt, and pepper to taste. Set aside.
In a separate pan, heat olive oil over medium heat. Add onion and garlic, cook until softened, about 5 minutes.
Stir in the shrimp and cook until pink, about 2 3 minutes per side. Remove from heat.
Once grits are cooked, stir in heavy cream, Parmesan cheese, and butter until fully combined and smooth. Season with salt and pepper to taste.
Serve the shrimp over a bed of creamy grits, garnish with fresh parsley, and enjoy!
