Ingredients

  • 1 cup all
  • purpose flour
  • 1/2 cup cold, unsalted butter, cubed
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 8 ounces baby spinach
  • 1 cup sliced cremini mushrooms
  • 1 large onion, thinly sliced
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided
  • 8 ounces goat cheese
  • 1/2 cup almond milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons cornstarch
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon paprika

Instructions

  1. Begin by making the crust. In a large bowl, mix together flour and salt. Add cubed butter and use a pastry cutter or your fingers to incorporate the butter into the flour until it forms a coarse meal. Gradually add cold water until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out the chilled dough and press it into a greased 9 inch pie dish or quiche pan. Trim excess dough and set aside.
  3. Bake the crust for 15 minutes, then remove from oven and let cool slightly. Reduce oven temperature to 350°F (175°C).
  4. In a large skillet, heat olive oil over medium heat. Add sliced onions, stirring occasionally, and cook until caramelized, about 20 25 minutes. Season with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Set aside.
  5. In another skillet, sauté the mushrooms over medium heat for 3 4 minutes or until tender. Season with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Add spinach to the skillet and cook until wilted, about 2 minutes.
  6. In a blender, combine almond milk, nutritional yeast, cornstarch, turmeric, ground nutmeg, paprika, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Blend until smooth and creamy.
  7. Combine the sautéed vegetables and crumbled goat cheese in a large bowl. Stir in the blended mixture until well combined. Pour this mixture into the pre baked pie crust, filling it to the top.
  8. Bake the quiche for 30 35 minutes or until set and golden brown. Remove from oven and let cool slightly before slicing.
