  4. In a small cup, mix cornstarch with 2 tbsp of water to create a slurry.
  5. Stir the cornstarch slurry into the chocolate mixture and cook over medium heat, whisking constantly, until the pudding thickens and coats the back of a spoon (about 4 6 minutes).
  6. Divide the pudding among two serving dishes and refrigerate for at least 2 hours or until set.
  7. To serve, garnish with sliced tropical fruits, toasted coconut flakes, and mint leaves.
