  • free all
  • purpose flour
  • 6 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup cocoa powder
  • 1/2 cup semi
  • sweet chocolate chips
  • 1/2 cup confectioners' sugar
  • Pinch of ground cinnamon
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together almond flour, gluten free all purpose flour, and salt. Set aside.
  3. In another large bowl, beat egg yolks, sugar, vanilla extract, and milk until smooth. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  4. In a third bowl, whisk egg whites until stiff peaks form. Gently fold egg whites into the batter. Pour the mixture into the prepared pan.
  5. Bake for 30 35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely on a wire rack.
  6. In a saucepan, combine heavy cream and cocoa powder. Heat over medium heat, stirring constantly, until the mixture thickens slightly. Remove from heat and stir in chocolate chips until melted and smooth. Let it cool at room temperature.
  7. Once the sponge cake is completely cool, cut it into two equal layers. Place the bottom layer on a serving plate. Spread vanilla custard evenly over the bottom layer. Top with the second layer of cake.
  8. Drizzle the chocolate ganache over the top and sides of the cake. Let the chocolate set for a few minutes.
  9. In a small bowl, mix confectioners' sugar, ground cinnamon, and nutmeg. Sprinkle this mixture lightly over the set chocolate to finish off your delightful gluten free Lamington Tower.
