Instructions

  2. Meanwhile, prepare the ugali by mixing the maize flour with water in a large bowl. Knead the dough until it forms a soft and pliable consistency. Divide the dough into 6 equal portions.
  3. In a small bowl, combine the diced tomatoes, chopped cilantro, sliced onion, green peppers, red peppers, ground cumin, lemon juice, and salt. Stir well to combine.
  4. Once the chicken is cooked, remove from the oven and let it rest for a few minutes. Serve each piece of roasted chicken alongside a portion of ugali and a generous scoop of spicy kachumbari salad.
