Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp sweet paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 4 oz cream cheese, softened
- 2 cups shredded mozzarella cheese
- 3 slices bacon, cooked and crumbled
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off of the bell peppers and remove seeds. In a large skillet, cook ground beef, onion, and garlic over medium heat until browned and cooked through. Season with paprika, cumin, salt, and pepper. Set aside. Combine cream cheese, 1 cup mozzarella, and half of the crumbled bacon in a bowl. Mix well. Stuff each bell pepper with the ground beef mixture and top with the cheese sauce. Sprinkle remaining mozzarella on top and place stuffed peppers in a baking dish. Bake for 25 30 minutes, or until cheese is bubbly and golden brown. Top with crumbled bacon and chopped parsley before serving.

To enhance flavor, use a mix of different colored bell peppers for a beautiful and tasty display.

For a vegetarian option, substitute ground meat with vegetables such as zucchini or eggplant.
