Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sweet paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 4 oz cream cheese, softened
  • 2 cups shredded mozzarella cheese
  • 3 slices bacon, cooked and crumbled
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off of the bell peppers and remove seeds. In a large skillet, cook ground beef, onion, and garlic over medium heat until browned and cooked through. Season with paprika, cumin, salt, and pepper. Set aside. Combine cream cheese, 1 cup mozzarella, and half of the crumbled bacon in a bowl. Mix well. Stuff each bell pepper with the ground beef mixture and top with the cheese sauce. Sprinkle remaining mozzarella on top and place stuffed peppers in a baking dish. Bake for 25 30 minutes, or until cheese is bubbly and golden brown. Top with crumbled bacon and chopped parsley before serving.
