Instructions

  1. In a large pot, bring water to a boil. Add gluten free cornmeal and pearl barley, stirring constantly. Reduce heat and simmer for about 20 minutes or until the mixture thickens and becomes tender. Stir in oil, onion, garlic, tomato, salt, and pepper. Cook for an additional 5 minutes.
  2. While the Githeri cooks, prepare the Spicy Kachumbari by combining all ingredients in a bowl. Mix well and let it sit for about 10 minutes to allow flavors to meld.
