  • 1 lb boneless, skinless chicken breasts

Instructions

  1. Rinse the chicken breasts and bell peppers, then slice the chicken into thin strips and set aside. Slice the bell peppers into strips and set them aside as well.
  2. In a large pan, heat 2 tbsp of olive oil over medium heat. Add the sliced chicken strips, season with taco seasoning, salt, and pepper to taste. Cook for about 5 7 minutes or until fully cooked, stirring occasionally. Remove from the pan and set aside.
  3. In the same pan, add another tbsp of olive oil and sauté the sliced bell peppers for 3 4 minutes or until tender but still crisp. Season with a pinch of salt and pepper.
  4. Meanwhile, prepare the cilantro lime rice according to package instructions or using your preferred method. Stir in the zest and juice of one lime into the cooked rice.
  5. To plate, place a generous portion of the cilantro lime rice at the bottom of each bowl. Top with the sautéed bell peppers, followed by the seasoned chicken strips.
  6. Drizzle any remaining juices from the pan over the dish for added flavor. Garnish with a sprinkle of fresh cilantro and a wedge of lime.
