  1. In a medium sized mixing bowl, combine the shrimp with coconut oil, coriander, cumin, turmeric, cardamom, cinnamon, ginger, salt, and black pepper. Mix well to ensure the shrimp is evenly coated with the spice mixture. Cover and refrigerate for 30 minutes to allow the flavors to marinate.
  2. While the shrimp is marinating, prepare the pineapple chunks. Set aside.
  3. Preheat your grill or grill pan over medium high heat.
  4. Thread the shrimp and pineapple pieces onto the skewers, alternating between shrimp and pineapple.
