  • 1 cup mayonnaise
  • 1/4 cup finely chopped parsley

  • 2 medium zucchinis
  • 1/2 cup almond flour
  • 1 egg, beaten

Instructions

  1. In a large bowl, combine crab meat, mayonnaise, parsley, chives, Parmesan cheese, lemon juice, salt, and pepper. Mix well. Refrigerate while preparing zucchini fritters.
  2. Slice zucchinis into 1/4 inch thick rounds.
  3. In a shallow dish, beat the egg. In another, add almond flour. Dip each zucchini round in the egg and then coat with almond flour, shaking off excess.
  4. Heat oil in a frying pan over medium heat. Fry zucchini rounds until golden brown, about 2 3 minutes per side. Remove and place on paper towels to drain.
  5. Serve crab dip and fritters together with your choice of low carb vegetables or crackers.
