Instructions

  1. Prepare the adobo sauce by combining coconut aminos, apple cider vinegar, tomato paste, water, coconut sugar, ground black pepper, ground cumin, ground paprika, ground allspice, and bay leaf in a medium sized mixing bowl. Stir until well combined.
  2. In a large skillet or wok, heat 1/3 cup of vegetable broth over medium heat. Add the jackfruit and cook for about 5 minutes, stirring occasionally to prevent sticking.
  3. Pour the adobo sauce over the jackfruit and bring the mixture to a simmer. Lower the heat and let it cook for 10 12 minutes or until the jackfruit has absorbed most of the flavors.
  4. In a large pot, combine cooked jasmine rice with bok choy, carrots, and bell peppers. Pour in enough water to cover the vegetables partially and bring them to a boil. Lower the heat and let them cook for about 5 minutes or until tender.
