  • 4 black pudding links

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pan, cook bacon over medium heat until crispy remove and set aside.
  3. Add sausages and black pudding to the pan and cook until browned, turning occasionally. Transfer to the oven and bake for 10 minutes or until fully cooked.
  4. In a separate pan, sear mushrooms until tender and slightly golden. Season with salt and pepper.
  5. Lightly fry avocado slices in butter until warmed through.
  6. Arrange toast on a large platter, top with sausages, black pudding, mushrooms, and avocado.
  7. Place two halves of a soft boiled egg on the dish.
  8. Surround the main ingredients with cherry tomatoes and mixed greens.
  9. Drizzle truffle oil over the dish and garnish with fresh parsley.
