Ingredients

  • 12 oz gluten
  • free rice noodles
  • 30 large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 8 lemongrass stalks, bruised

  • 1 cup tapioca flour
  • 3 tbsp granulated sugar
  • 1/4 cup fresh lime juice
  • 1/4 cup fish sauce
  • 1/4 cup vegetable oil
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. Start by preparing the Garlic Shrimp Noodles. In a large pot, bring water to a boil, add gluten free rice noodles, and cook according to package instructions until al dente. Drain and set aside.
  2. In a pan, heat 1 tbsp vegetable oil over medium heat. Add minced garlic and sauté for 30 seconds or until fragrant.
  3. Add shrimp and cook for 2 3 minutes per side, or until pink and cooked through. Season with salt and pepper. Remove from pan and set aside.
  4. In another pan, heat 1 tbsp vegetable oil over medium heat. Add bruised lemongrass stalks and sauté for 1 minute, then add chicken cubes. Cook until browned on all sides and cooked through. Season with salt and pepper. Remove from pan and set aside.
  5. In a large bowl, whisk together coconut milk, tapioca flour, sugar, lime juice, and fish sauce. Strain the mixture to remove any remaining solids from the tapioca flour.
  6. Pour the coconut mixture into the pan used for cooking the chicken, and cook over medium heat, stirring constantly, until the sauce thickens. Remove the lemongrass stalks.
  7. Combine the cooked shrimp, chicken, and noodles in a large serving dish and pour the sauce over them. Garnish with fresh cilantro.
  8. For dessert, prepare the Coconut Tapioca Pudding separately, following the recipe instructions.
