Ingredients

  • 4 oz sugar
  • free dark chocolate, finely chopped
  • 1/2 cup heavy whipping cream
  • 1/4 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • 1 tbsp unsalted butter, softened
  • 1 cup pecans, chopped
  • 3 tbsp sugar
  • free maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground black pepper

Instructions

  1. Prepare the spicy pecan brittle: In a medium saucepan over medium heat, combine pecans, sugar free maple syrup, and spices. Cook until pecans are coated and syrup has thickened, about 4 minutes. Remove from heat and let cool.
  2. Prepare the chocolate mousse: In a double boiler or microwave, melt the sugar free dark chocolate with butter. Stir until smooth. Set aside to slightly cool.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Fold in the cooled chocolate mixture gently.
  4. Add cayenne pepper, paprika, garlic powder, onion powder, and sea salt into the chocolate mousse. Mix well.
  5. Divide the mousse evenly into two serving dishes. Chill for at least 2 hours or until set.
  6. Once set, top with the spicy pecan brittle and serve chilled.

Chef’s Insight
