  • 2 cups heavy cream
  • 4 egg yolks
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • Confectioners' sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, heat the heavy cream until it starts to steam but not boil. Remove from heat and set aside.
  3. In a large mixing bowl, whisk together the egg yolks, sugar, cornstarch, vanilla extract, cinnamon, and salt until well combined.
  4. Slowly pour the heated cream into the egg yolk mixture while continuously whisking to avoid curdling.
  5. Pour the custard mixture back into the saucepan over medium heat, stirring constantly until it thickens and comes to a boil. Remove from heat and strain through a fine mesh sieve into a clean bowl. Allow to cool slightly.
  6. On a lightly floured surface, roll out the puff pastry sheet to fit your tart pan or molds. Cut out circles using a round cookie cutter or glass, then press gently into the tart pan or molds.
  7. Fill each tart shell with the prepared custard and bake in the preheated oven for 20 25 minutes, or until golden brown and puffed up.
  8. Allow the tarts to cool slightly before removing from the pan or mold. Dust with confectioners' sugar if desired and serve warm.
