Ingredients
1 kilogram chicken pieces (with bones)
1 cup soy sauce
1/2 cup white vinegar
1/4 cup water
8 cloves garlic, minced
1 teaspoon black peppercorns, crushed
3 bay leaves
2 cups uncooked jasmine rice
4 tablespoons vegetable oil
6 cloves garlic, finely chopped
1 large onion, diced
2 ripe mangoes, peeled and diced
1/2 cup red bell pepper, diced
Salt and sugar, to taste
Fresh cilantro leaves, for garnish
Instructions
In a large pot, combine chicken pieces, soy sauce, white vinegar, water, minced garlic, crushed black peppercorns, and bay leaves. Bring the mixture to a boil, then reduce heat to low and let it simmer until the chicken is cooked through and tender, about 45 minutes.
While the chicken is cooking, prepare the garlic fried rice. In a large pan or wok, heat vegetable oil over medium heat. Add chopped garlic and sauté until fragrant and golden brown. Add diced onion and cook until softened. Stir in cooked jasmine rice, seasoning with salt and sugar to taste. Cook for 5 7 minutes, stirring frequently, until the rice is heated through and slightly crispy. Set aside.
For the mango salsa, combine diced mangoes, red bell pepper, salt, and sugar in a bowl. Taste and adjust seasonings as needed. Set aside.
Once the chicken is cooked, remove from the pot and allow to rest for a few minutes before shredding. Reserve the sauce.
To serve, divide the garlic fried rice among 4 plates, making a slight hollow in the center of each portion. Place shredded chicken on top of the rice and drizzle with reserved sauce. Spoon mango salsa over the chicken and garnish with fresh cilantro leaves.
