Instructions

  1. In a large skillet or Dutch oven, heat 1 tablespoon of oil over medium high heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 7 minutes. Flip and cook for another 3 4 minutes on the other side. Remove the chicken from the pan and set aside.
  2. In the same skillet or Dutch oven, add 1 tablespoon of oil and sauté the sliced onion until softened and slightly caramelized, about 5 7 minutes.
  3. Stir in the curry powder, turmeric, salt, black pepper, and cayenne pepper (if using) and cook for another 1 2 minutes, or until fragrant.
  4. Add the garlic and ginger to the skillet and stir to combine with the spices. Cook for about 30 seconds, or until fragrant.
  5. Pour in the coconut milk, stirring to combine with the spice mixture. Bring the sauce to a simmer, then return the browned chicken thighs to the pan, skin side up, nestling them into the sauce. Cover and cook for 20 25 minutes, or until the chicken is cooked through and tender.
  6. While the chicken is cooking, prepare the jasmine rice according to package instructions.
