Ingredients

  • 2 cups uncooked long
  • grain white rice
  • 1 cup vegetable broth
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, pureed
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 8 oz extra
  • firm tofu, pressed and diced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon Suya spice mix
  • 1/4 cup chopped fresh cilantro, for garnish
  • 1 avocado, sliced, for garnish

Instructions

  1. Prep:
  2. Press the tofu and dice it into bite sized cubes.
  3. Chop the onion, garlic, bell pepper, and cilantro.
  4. Slice the avocado. Cooking:
  5. In a large saucepan, heat the vegetable oil over medium heat. Add the onion and sauté until translucent, about 3 minutes.
  6. Stir in the garlic, ground ginger, ground cumin, paprika, nutmeg, and allspice. Cook for 1 minute to release the aroma of the spices.
  7. Add the tomato puree, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  8. Stir in the rice, salt, and black pepper. Cover and cook according to package instructions until the rice is tender and has absorbed all the liquid, about 18 20 minutes.
  9. In a large nonstick skillet or grill pan, heat the vegetable oil over medium high heat. Add the diced tofu and cook until golden brown on all sides, about 6 7 minutes.
  10. In a small bowl, mix together the soy sauce and Suya spice mix. Brush onto the cooked tofu and cook for an additional 2 3 minutes, until the tofu is crispy and infused with the spice mixture. Assemble:
  11. Spoon the cooked rice into a large serving bowl, creating a bed for the Suya Tofu.
  12. Arrange the Suya Tofu on top of the rice.
  13. Garnish with fresh cilantro and avocado slices.
